Description
Anise Pizzelle Cookies are delicate, crisp Italian waffle cookies flavored with a fragrant blend of anise and vanilla extracts. These traditional treats are made using a pizzelle iron, resulting in beautifully patterned, golden cookies perfect for any occasion. With a light texture and subtle sweet licorice notes, these cookies are ideal for serving alongside coffee or tea or as a festive holiday treat.
Ingredients
Scale
Dry Ingredients
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
Wet Ingredients
- 3 large eggs
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 1/2 teaspoons anise extract
- 1 teaspoon vanilla extract
Instructions
- Preheat the Pizzelle Iron: Plug in or preheat your pizzelle iron and lightly grease it if necessary to prevent sticking.
- Whisk Eggs and Sugar: In a large bowl, whisk together the eggs and granulated sugar until the mixture becomes light and fluffy, ensuring the cookies have a delicate texture.
- Add Melted Butter and Extracts: Stir the melted unsalted butter, anise extract, and vanilla extract into the egg and sugar mixture until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt to evenly distribute the leavening and seasoning.
- Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients and gently mix just until combined, avoiding overmixing to keep the batter tender.
- Cook the Pizzelle: Drop a tablespoon of batter onto the center of each mold in the preheated pizzelle iron.
- Close and Bake: Close the iron and cook the pizzelle for 20–30 seconds until they turn golden and crisp.
- Cool the Cookies: Carefully remove the pizzelle and place them on a cooling rack to cool and crisp up fully.
- Shape if Desired: While still warm and pliable, shape the pizzelle into cones or other forms as desired.
- Store Properly: Once completely cooled, store the pizzelle cookies in an airtight container at room temperature to maintain their crispness.
Notes
- If you don’t have a pizzelle iron, a regular waffle iron might be used, but the traditional pattern may not be achieved.
- For a stronger anise flavor, increase the anise extract slightly, but do so cautiously to avoid overpowering the cookies.
- Ensure to grease the pizzelle iron lightly if your iron tends to stick to avoid breaking the delicate cookies.
- These cookies are best enjoyed within a week when stored properly to maintain crispness.
- Shape the pizzelle quickly while they are warm, as they become brittle once cooled.
