Ingredients

Scale

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Additional Ingredients:

  • 6 tablespoons cold unsalted butter (cut into small cubes)
  • 1/2 cup chopped apple (peeled and cored)
  • 1/3 cup raisins
  • 2/3 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • additional cream and coarse sugar for topping (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Dough: In a large mixing bowl, whisk together the dry ingredients. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the apple and raisins. In a separate bowl, whisk together the cream, egg, and vanilla. Combine wet and dry ingredients to form a dough.
  3. Shape and Bake: Turn the dough out onto a floured surface, pat into a circle, and cut into wedges. Place on the baking sheet, brush with cream, and sprinkle with sugar. Bake for 18–22 minutes until golden brown. Cool before serving.

Notes

  • For a softer scone, avoid overworking the dough.
  • You can use dried cranberries or chopped dates instead of raisins.
  • Granny Smith or Honeycrisp apples are recommended for this recipe.
