Ingredients
Scale
For the Salmon
- 8-10 medium tortillas (corn or flour)
- 1/2 pound fresh salmon
- 1 teaspoon olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1/8 teaspoon ground cumin
- Salt & pepper (to taste)
For the Sauce
- 1 cup plain Greek yogurt
- 1 tablespoon lime juice (or to taste)
- 1 clove garlic (minced)
- 1-2 tablespoons fresh cilantro (chopped, or to taste)
- Salt & pepper (to taste)
For Assembly
- 1 avocado (diced)
- Iceberg lettuce (shredded, to taste)
- Lime wedges (to taste)
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C) and position the oven rack in the middle. Line a baking sheet with aluminum foil for easy cleanup.
- Prepare and bake the salmon: Place the fresh salmon fillet on the prepared baking sheet. Drizzle the olive oil over the salmon and gently coat it evenly. Sprinkle the garlic powder, chili powder, ground cumin, and salt & pepper over the salmon. Bake in the oven for 10-15 minutes, or until the salmon flakes easily with a fork, indicating it is cooked through.
- Make the cilantro-lime yogurt sauce: While the salmon bakes, combine the plain Greek yogurt, lime juice, minced garlic, and chopped fresh cilantro in a medium bowl. Season with salt and pepper to taste. Mix well and adjust seasoning as needed.
- Prepare the toppings: Dice the avocado and shred the iceberg lettuce to your preferred amounts. Set aside along with lime wedges for serving.
- Assemble the tacos: Once the salmon has finished baking, use a fork to roughly break it into bite-sized pieces. Warm the tortillas if desired. Spread a layer of the cilantro-lime yogurt sauce on each tortilla, then add the baked salmon pieces, diced avocado, and shredded lettuce. Serve immediately with lime wedges on the side to squeeze over the tacos for added brightness.
Notes
- You can use either corn or flour tortillas based on your preference or dietary needs.
- For more spice, consider adding a pinch of cayenne pepper to the salmon seasoning.
- The yogurt sauce can be prepared in advance and refrigerated for up to 2 days.
- To keep tacos warm while assembling, wrap them in foil and place in a warm oven (around 200°F) for a few minutes.
- Optional toppings include diced tomatoes, sliced jalapeños, or shredded cheese for extra flavor and texture.
