- 1/4 cup olive oil
- 3 tablespoons balsamic vinegar

- 1 tablespoon yellow mustard
- 1 teaspoon garlic powder

Instructions
- Prepare the Marinade: In a small bowl, whisk together olive oil, balsamic vinegar, lemon juice, yellow mustard, garlic powder, salt, and pepper until smooth and well combined.
- Marinate the Chicken: Place the chicken breasts in a large ZipLoc bag or a covered bowl. Pour the marinade over the chicken, seal or cover, and refrigerate for at least 30 minutes, or up to a few hours to allow the flavors to infuse.
- Grill the Chicken: Remove the marinated chicken from the fridge. Preheat a gas BBQ grill to medium-high heat. Grill the chicken breasts (halved lengthwise) for 5-6 minutes on each side, until cooked through and nicely charred.
Notes
- Marinate the chicken for at least 30 minutes for best flavor absorption; longer marinating times up to a few hours intensify the taste.
- Using yellow mustard adds a subtle tang and helps emulsify the marinade.
- If you don’t have a grill, chicken can be cooked on a stovetop grill pan or baked in the oven at 400°F for 20-25 minutes.
