Description

These Basic Cauliflower Fritters are a delicious and easy-to-make appetizer or side dish featuring tender cauliflower mixed with Parmesan cheese and green onions, lightly fried to a perfect golden crisp. Cauliflower Mixture

  • 1 medium head cauliflower, cut into florets (about 4 cups)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Frying

  • 2–3 tablespoons olive oil or vegetable oil


Instructions

  1. Cook the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 5–6 minutes until tender. Drain well and mash with a fork or potato masher until broken down but still a bit chunky.
  2. Prepare the Fritter Batter: In a large bowl, mix the mashed cauliflower with eggs, flour, Parmesan cheese, finely chopped green onions, minced garlic, salt, and black pepper until well combined.
  3. Cook the Fritters: Heat oil in a large skillet over medium heat. Scoop about 2 tablespoons of the mixture per fritter into the skillet and flatten gently with the back of a spoon. Cook for 3–4 minutes per side, or until golden brown and crispy.
  4. Drain and Serve: Transfer the cooked fritters to a paper towel-lined plate to drain excess oil. Serve warm with sour cream, yogurt, or your favorite dip.

Notes

  • For a gluten-free version, use a 1:1 gluten-free flour blend instead of all-purpose flour.
  • To make a lighter option, bake the fritters at 400°F (200°C) for 20–25 minutes, flipping halfway through.
