Beef and Onions
- 2 lbs ground beef
- 2 yellow onions, chopped
- 2 tsp sea salt
- 1 tsp black pepper
Quesadilla Assembly
- 8 8-inch flour tortillas
- 6–8 cups cheddar cheese (mix with sharp or pepper jack for a twist)
- 4 cups shredded lettuce
- 8–10 dill pickles, sliced
- Optional: sliced jalapeños or red chilies (for heat)
- Optional: sesame seeds for garnish (Big Mac nod)
Instructions
- Cook Beef and Onions: In a skillet over medium heat, cook the ground beef and chopped yellow onions together until the beef is browned and cooked through. Season the mixture with 2 teaspoons sea salt and 1 teaspoon black pepper to enhance the flavor, then set aside.
- Prepare the Sauce: In a bowl, combine the mayonnaise, ketchup, dill pickle juice, minced dill pickles, yellow mustard, white vinegar, sea salt, black pepper, and smoked paprika. Mix well until smooth and set the sauce aside.
- Wipe Skillet Clean and Assemble Quesadilla: Clean the skillet to remove any leftover beef or onions and place it back on medium heat. Layer one flour tortilla in the skillet, then generously spread cheddar cheese, followed by a portion of the cooked beef mixture, and drizzle some of the prepared Big Mac sauce on top. Cover with a second flour tortilla.
- Cook the Quesadilla: Cook the layered quesadilla for 2 to 3 minutes on each side, or until both tortillas are golden brown and crisp and the cheese inside is melted.
- Serve and Garnish: Remove the quesadilla from the skillet and slice it into quarters. Top each piece with shredded lettuce, sliced dill pickles, extra sauce, and optionally jalapeños or red chilies for heat. Sprinkle sesame seeds over the top for a fun Big Mac-inspired garnish before serving.
