Blueberry Sauce

- 8 ounces goat cheese log, cut into 6 pieces
Instructions
- Make Blueberry Sauce: Add blueberries and honey (or your preferred sweetener) into a medium-sized bowl. Microwave for 30-60 seconds until the blueberries start to expand and a few burst. Mash the berries using a slotted spoon or potato masher until a thick sauce forms. Stir in lemon juice, vanilla extract, and a pinch of salt. Place the mixture in the freezer for 15-20 minutes to cool completely.
- Mix Goat Cheese: Cut the goat cheese into 6 pieces and gently fold them into the blueberry sauce mixture. Stir until just combined, leaving some chunks of goat cheese to maintain texture. If needed, return the mixture to the freezer for an additional 15 minutes to firm up.
- Form into Log: Lay two 15-inch pieces of plastic wrap in a plus sign formation on a flat surface. Place the blueberry-goat cheese mixture in the center of the horizontal wrap piece, shaping it into a log. Wrap the mixture first with the horizontal plastic wrap, then with the vertical one, twisting the ends to seal tightly and reinforce the log shape.
- Refrigerate and Serve: Refrigerate the log for 2-4 hours or freeze for 30-45 minutes until firm. Before serving, bring it back to room temperature and enjoy it with your favorite crackers.
