  • 1/2 cup almond milk
  • 1/4 cup coconut oil, melted and cooled slightly
  • 1/3 cup honey
  • 1 1/2 tsp vanilla extract

Instructions

  1. Preheat oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to ensure it reaches the right temperature while you prepare the mixture.
  2. Mix dry ingredients: In a large bowl, combine the quick cooking oats, oat flour, brown sugar, baking soda, cinnamon, and salt. Whisk these together to ensure an even distribution of the ingredients.
  3. Combine wet ingredients: In a separate bowl, whisk together the eggs, almond milk, melted and slightly cooled coconut oil, honey, and vanilla extract until smooth and well blended.
  4. Incorporate wet into dry: Pour the wet ingredient mixture into the dry ingredients bowl. Gently mix until just combined to avoid overmixing, which can make the bars tough.
  5. Fold in blueberries: Carefully fold in the fresh blueberries, distributing them evenly throughout the batter without crushing them.
  6. Transfer to baking dish: Pour the batter into a greased or parchment-lined baking dish, spreading it evenly to prepare for baking.
  7. Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the bars are golden on top and a toothpick inserted in the center comes out clean.
  8. Cool and slice: Allow the bars to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely. Once cooled, slice them into 16 bars and serve.
