- 1/3 cup honey
- 1 1/2 tsp vanilla extract

Instructions
- Preheat oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to ensure it reaches the right temperature while you prepare the mixture.
- Mix dry ingredients: In a large bowl, combine the quick cooking oats, oat flour, brown sugar, baking soda, cinnamon, and salt. Whisk these together to ensure an even distribution of the ingredients.
- Combine wet ingredients: In a separate bowl, whisk together the eggs, almond milk, melted and slightly cooled coconut oil, honey, and vanilla extract until smooth and well blended.
- Incorporate wet into dry: Pour the wet ingredient mixture into the dry ingredients bowl. Gently mix until just combined to avoid overmixing, which can make the bars tough.
- Fold in blueberries: Carefully fold in the fresh blueberries, distributing them evenly throughout the batter without crushing them.
- Transfer to baking dish: Pour the batter into a greased or parchment-lined baking dish, spreading it evenly to prepare for baking.
- Bake: Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the bars are golden on top and a toothpick inserted in the center comes out clean.
- Cool and slice: Allow the bars to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely. Once cooled, slice them into 16 bars and serve.
