Description

  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon butter
  • 1 tablespoon chopped fresh parsley (optional for garnish)


Instructions

  1. Prepare the chicken: Pound the chicken breasts to an even thickness to ensure even cooking. Season both sides with salt, pepper, and garlic powder for a flavorful base.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5–6 minutes per side until golden brown and fully cooked through. Transfer the cooked chicken to a plate and loosely cover with foil to keep warm.
  3. Make the sauce: Reduce the heat to medium. In the same skillet, add butter and allow it to melt. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan to incorporate flavor. Stir in the Boursin cheese and heavy cream, whisking continuously until the cheese is melted and the sauce is smooth. Let the sauce simmer for 2–3 minutes until it slightly thickens.
  4. Combine and finish: Return the chicken breasts to the skillet, spooning the creamy sauce over the top. Let it simmer for an additional 2 minutes to heat everything through and meld the flavors.
  5. Garnish and serve: Sprinkle chopped fresh parsley over the chicken for color and freshness. Serve warm paired with mashed potatoes, pasta, or sautéed spinach for a complete meal.
