Ingredients
Scale
Chicken and Seasoning
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Bruschetta Topping
- 4 Roma tomatoes, diced
- 2 cloves garlic, minced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon salt
- 1 tablespoon olive oil
Additional Toppings and Garnish
- 1/2 cup shredded mozzarella cheese (optional)
- Fresh basil leaves for garnish
- Extra balsamic glaze for garnish
Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) to prepare for baking the chicken.
- Prepare the Chicken: Pat the chicken breasts dry with paper towels. Place them on a baking sheet. Drizzle with 1 tablespoon olive oil and season both sides evenly with Italian seasoning, garlic powder, salt, and black pepper.
- Bake the Chicken: Place the baking sheet in the oven and cook the chicken for 20 to 25 minutes, or until the internal temperature reads 165°F (74°C), ensuring it is fully cooked through.
- Make the Bruschetta Topping: While the chicken bakes, combine diced tomatoes, minced garlic, chopped red onion, chopped basil, balsamic vinegar, remaining 1 tablespoon olive oil, and 1/4 teaspoon salt in a mixing bowl. Stir well and let it sit to marinate, allowing flavors to meld.
- Top the Chicken: Once the chicken is done baking, remove it from the oven. Spoon a generous amount of the bruschetta mixture over each chicken breast.
- Add Cheese and Broil: Sprinkle shredded mozzarella cheese over the topped chicken breasts, if using. Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese has melted and is bubbly.
- Garnish and Serve: Remove the chicken from the oven. Garnish with fresh basil leaves and a drizzle of balsamic glaze. Serve immediately for a delicious, fresh Italian-inspired meal.
Notes
- You can grill the chicken instead of baking it to add a smoky flavor.
- For a dairy-free option, omit the mozzarella cheese.
- Heirloom or cherry tomatoes may be used for a sweeter bruschetta topping.
