Roasted Tomatoes
- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- 2 tablespoons basil pesto

Cheese Mixture
- 1 cup sour cream
- ½ cup fresh chopped basil
- 8 ounces fresh mozzarella, cut into chunks
- 8 ounces shredded provolone cheese
- ¼ cup freshly grated parmesan cheese
For Garnish
- Fresh basil leaves
- Halved cherry tomatoes
Instructions
- Preheat Oven: Set your oven to 400°F to prepare for roasting the tomatoes and baking the dip.
- Roast Tomatoes: In a baking dish, toss whole cherry tomatoes with olive oil, basil pesto, minced garlic, salt, and pepper until well coated. Bake for 15 minutes until the tomatoes soften and release their juices.
- Prepare Cheese Mixture: While the tomatoes roast, combine sour cream and chopped fresh basil in a mixing bowl. Stir in the mozzarella chunks, shredded provolone, and grated parmesan until all ingredients are evenly combined.
- Combine Ingredients: Take the roasted tomatoes out of the oven and gently fold them into the cheese mixture. Add halved cherry tomatoes on top for an attractive presentation and extra fresh flavor.
- Bake Dip: Return the baking dish to the oven and bake for an additional 20 minutes, until the cheese melts completely and the dip is bubbly and golden brown on top.
- Garnish and Serve: Remove from oven, garnish with fresh basil leaves, and serve warm with crusty bread or crackers for dipping.
