For the Filling
- 20 large white or cremini mushrooms, stems removed and reserved
- 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese
- 2 tbsp cream cheese, softened
- 2 tbsp grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil (for sautéing stems)
- Salt & pepper, to taste
For the Topping
- ½ cup breadcrumbs (panko or regular)
- 2 tbsp melted butter
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease or line a baking sheet with parchment paper to prepare for baking the mushrooms.
- Sauté Mushroom Stems: Finely chop the reserved mushroom stems. Heat olive oil in a skillet over medium heat and sauté the chopped stems along with minced garlic until tender and most of the moisture has evaporated. Season with salt and pepper to taste, then allow the mixture to cool slightly.
- Prepare Cheese Filling: In a mixing bowl, combine Boursin Garlic & Fine Herbs cheese, softened cream cheese, grated Parmesan cheese, chopped fresh parsley, and the sautéed mushroom stems. Mix well until all ingredients are thoroughly incorporated.
- Stuff Mushroom Caps: Generously fill each mushroom cap with the prepared cheese and herb mixture, ensuring they are well-packed with flavorful filling.
- Prepare Breadcrumb Topping: In a separate small bowl, toss the breadcrumbs with melted butter until they are evenly coated.
- Top and Bake: Sprinkle the buttery breadcrumb mixture evenly over the stuffed mushrooms. Arrange them on the prepared baking sheet and bake in the preheated oven for 20 to 25 minutes, or until the mushrooms are tender and the tops are golden brown.
