Description

This luscious Chocolate Chip Cookie Dough Ice Cream Cake combines the chewy warmth of freshly baked cookie dough with creamy vanilla ice cream and rich hot fudge sauce, layered to perfection and frozen into a delightful summer dessert that’s perfect for birthdays or any special occasion.

Ingredients

Scale

Cookie Dough Crust

  • 1 package (16.5 ounces) refrigerated chocolate chip cookie dough

Ice Cream Layers

  • 1.5 quarts vanilla ice cream, slightly softened
  • 1 cup mini chocolate chips
  • 1/2 cup hot fudge sauce

Optional Garnish

  • 1/2 cup whipped topping
  • Extra cookie dough pieces or mini cookies for garnish

Instructions

  1. Preheat and Prepare Crust: Preheat your oven to 350°F. Grease a 9-inch springform pan or line a cake pan with parchment paper. Press the refrigerated chocolate chip cookie dough evenly into the bottom of the pan to form the crust.
  2. Bake the Cookie Crust: Bake the cookie dough in the preheated oven for 15 to 18 minutes, until the crust is golden brown and set in the center. Remove from oven and allow it to cool completely in the pan.
  3. First Ice Cream Layer: Once the cookie crust is fully cooled, spread half of the slightly softened vanilla ice cream evenly over the crust. This creates the first creamy layer of the cake.
  4. Add Chocolate Chips and Fudge: Sprinkle half of the mini chocolate chips over the ice cream layer, then drizzle half of the hot fudge sauce evenly on top to add richness and texture.
  5. Second Ice Cream Layer and Toppings: Repeat the layering by spreading the remaining vanilla ice cream over the fudge layer, followed by the rest of the mini chocolate chips and the remaining hot fudge sauce. Smooth the surface with a spatula.
  6. Freeze the Cake: Cover the cake tightly with plastic wrap to prevent freezer burn. Freeze the cake for at least 4 hours, or until firm and set.
  7. Serve: When ready to serve, remove the cake from the freezer and pan. Let it sit at room temperature for 5 to 10 minutes to soften slightly for easier slicing. Garnish with whipped topping and extra cookie dough pieces or mini cookies if desired before serving.

Notes

  • For garnish, use either homemade or store-bought edible cookie dough pieces or mini cookies to add extra texture.
  • Try swapping the vanilla ice cream with chocolate or cookie dough-flavored ice cream for an exciting flavor twist.
