Description

This Chocolate Popcorn recipe combines crunchy popped popcorn with a rich, chocolatey coating made from brown sugar, butter, cocoa powder, and corn syrup. It’s an easy, no-bake treat perfect for movie nights or snack time with a perfect balance of sweet and salty flavors.

Ingredients

Scale

Popcorn

  • 190 grams popped popcorn (about 24 cups)

Chocolate Coating

  • ½ cup brown sugar (107 grams)
  • ½ cup unsalted butter (113 grams, slightly melted, 1 stick)
  • ¼ cup light corn syrup (78 grams)
  • ¼ cup unsweetened cocoa powder (21 grams)
  • 1 teaspoon pure vanilla extract (4 grams)
  • Sea salt (optional, to taste)

Instructions

  1. Prepare Popcorn and Baking Sheet: Line a baking sheet with parchment paper and place the popped popcorn in an extra large bowl. Set both aside to prepare for coating.
  2. Make Chocolate Mixture: In a large microwave-safe bowl, combine brown sugar, melted butter, corn syrup, and cocoa powder. Mix well to blend ingredients thoroughly.
  3. Heat Mixture: Microwave the mixture on high for 3 minutes. Remove and stir; if it has not reached a boil, continue heating in 30-second increments until boiling.
  4. Add Flavorings: Stir in vanilla extract and sea salt, if using, into the hot chocolate mixture for enhanced flavor.
  5. Coat Popcorn: Pour the chocolate mixture over the popcorn and use a rubber spatula to stir gently until popcorn is evenly coated with the chocolate mixture.
  6. Spread Popcorn: Spread the coated popcorn evenly onto the prepared parchment-lined baking sheet to allow for proper cooling and setting.
  7. Cool and Set: Let the popcorn cool at room temperature for 2 hours until the chocolate coating hardens and popcorn is ready to serve or package.

Notes

  • Ensure the chocolate mixture reaches a proper boil for the coating to harden well.
  • Use parchment paper on the baking sheet to prevent sticking and make cleanup easy.
  • Add sea salt according to taste to balance the sweetness.
  • For extra crunch, allow popcorn to fully cool and harden before storing.
  • Store in an airtight container to maintain freshness.
