Ingredients
Scale
Dry Ingredients
- 1 ¾ cups (220g) all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
Wet Ingredients
- â…“ cup (75g) unsalted butter, melted and cooled
- ½ cup (100g) granulated sugar
- 1 large egg
- ½ cup (120ml) whole milk
- 1 teaspoon vanilla extract
Cinnamon Sugar Coating
- ¼ cup (56g) unsalted butter, melted
- ½ cup (100g) granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C). Prepare a 12-cup muffin tin by lining it with paper liners or greasing it well to prevent sticking.
- Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon until evenly combined.
- Mix wet ingredients: In a separate bowl, whisk the melted and cooled butter with granulated sugar until smooth. Add in the egg, whole milk, and vanilla extract, mixing until the batter is uniform and creamy.
- Combine batter: Gradually add the dry ingredient mixture into the wet ingredients, stirring gently just until combined. Be careful not to overmix to keep the muffins tender.
- Fill and bake: Spoon the batter evenly into the prepared muffin tin, filling each cup about three-quarters full. Bake in the preheated oven for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool slightly: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool further but remain warm enough for coating.
- Coat in cinnamon sugar: Brush each warm muffin generously with melted butter, then roll them in the cinnamon sugar mixture made from granulated sugar and ground cinnamon until fully coated.
- Serve: Enjoy these donut-inspired muffins warm for the best flavor and texture, or at room temperature as a delicious treat any time of day.
Notes
- Use room temperature egg for better mixing and texture.
- Do not overmix the batter to avoid tough muffins.
- If you prefer less sugar, reduce cinnamon sugar coating quantity accordingly.
- These muffins can be stored in an airtight container for up to 3 days or frozen for longer storage.
- For a dairy-free version, substitute milk and butter with plant-based alternatives.
