Instructions
- Prepare the eggs: Once your fillings and toppings are prepared, beat the eggs and a pinch of fine sea salt in a small bowl until foamy to incorporate air and achieve a fluffy omelette.
- Heat the pan and melt butter: Heat 1/2 tablespoon of unsalted butter in a small non-stick skillet or pan over medium heat. Swirl the butter as it melts to coat the pan evenly. Wait until the butter starts bubbling, then reduce the heat to low.
- Cook the eggs gently: Pour the beaten eggs into the pan. Using a spatula, gently pull the cooked egg from the edges toward the center, allowing the uncooked egg to flow to the edges. Continue this process around the pan until the eggs are nearly set but still shiny on top.
- Flip the omelette: When the eggs can slide freely in the pan, carefully slide your spatula underneath and flip the omelette over. Immediately turn off the heat to prevent overcooking.
- Add fillings and fold: Sprinkle the shredded mozzarella cheese and your desired toppings such as sautéed vegetables, crispy bacon, or ham onto half of the omelette. Fold the other half over the fillings and gently transfer to a plate. Garnish with chopped chives or parsley, and serve with baby tomatoes and diced avocado on the side.
