Description

  • 1/2 cup coffee liqueur (optional)

Assembly

  • 2 packs (7 oz) ladyfinger cookies (Savoiardi)

Instructions

  1. Prepare Egg Yolk Mixture: In a large heatproof bowl, whisk together the egg yolks and sugar. Place the bowl over a saucepan of simmering water (double boiler) and whisk continuously for about 8 to 10 minutes until the mixture becomes pale and thick. Remove from heat and let cool slightly.
  2. Whip Cream: In a separate bowl, whip the heavy cream to stiff peaks. This will add lightness to the mascarpone filling.
  3. Combine Mascarpone and Egg Mixture: In another large bowl, gently fold the mascarpone cheese into the cooled egg yolk mixture until smooth. Then fold in the whipped cream until fully combined, ensuring a creamy and airy texture.
  4. Prepare Espresso Soak: In a shallow dish, mix the cooled espresso with coffee liqueur if using. This will be used to soak the ladyfingers.
  5. Dip Ladyfingers: Quickly dip each ladyfinger into the espresso mixture for 1 to 2 seconds, making sure they are soaked but not soggy to avoid a mushy dessert.
  6. Assemble Tiramisu Layers: Line the bottom of a 9×13-inch dish with a layer of dipped ladyfingers. Spread half of the mascarpone mixture evenly over the ladyfingers. Add another layer of dipped ladyfingers, then spread the remaining mascarpone mixture on top.
  7. Chill: Cover the assembled dish and refrigerate for at least 6 hours, preferably overnight, to allow flavors to meld and texture to set.
