  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tablespoon all-purpose flour
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup strong brewed espresso, cooled
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant espresso powder (optional)

For Garnish:

  • Whipped cream or chocolate shavings (optional)

Instructions

  1. Prepare the Crust: Preheat the oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a springform pan and bake for 10 minutes.
  2. Make the Filling: Beat cream cheese, sugar, and flour. Add eggs one at a time, then mix in sour cream, brewed espresso, vanilla, and espresso powder.
  3. Bake: Pour filling over crust, place in a water bath, and bake for 55–65 minutes. Cool in the oven before refrigerating.
  4. Serve: Chill for at least 4 hours, then garnish with whipped cream or chocolate shavings.

Notes

  • For a stronger coffee flavor, increase the espresso powder.
  • Use decaf coffee for a caffeine-free version.
  • Ensure all dairy ingredients are at room temperature.
