Chicken:

2 boneless skinless chicken breasts (sliced into thin strips)

Egg Yolks:

3 large

Parmesan Cheese:

Instructions

  1. Cook the Spaghetti: Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook for 5–6 minutes until golden and cooked through. Transfer to a plate and set aside.
  3. Prepare the Sauce: In the same skillet, cook chopped bacon until crisp. Add minced garlic and cook for 1 minute. Reduce heat to low. Whisk together heavy cream, egg yolks, and Parmesan cheese in a bowl.
  4. Combine Ingredients: Add cooked pasta and chicken to the skillet. Remove from heat and quickly pour in the cream mixture, stirring constantly to create a creamy sauce. Adjust consistency with reserved pasta water. Add red pepper flakes if desired.
  5. Serve: Top with chopped parsley and additional Parmesan. Serve immediately.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
