Crust Ingredients
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup butter, melted
- 1 tsp vanilla extract
Filling Ingredients
- 1 cup milk (whole or 2%)
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 tsp vanilla extract
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the pie.
- Prepare the Crust: In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. In a separate bowl, beat the eggs, then add the melted butter and vanilla extract. Pour the egg mixture into the dry ingredients and stir until combined. The batter will be thick.
- Prepare the Pie Dish: Grease a 9-inch pie dish with butter or cooking spray. Spread the crust mixture evenly at the bottom of the dish. The batter may look thin but it will set up during baking.
- Make the Filling: In a small saucepan, whisk together the milk, granulated sugar, flour, and vanilla extract. Place the saucepan over medium heat and cook, whisking constantly, until the mixture thickens, which should take about 5 to 7 minutes. After thickening, pour the filling over the crust layer in the pie dish.
- Bake the Pie: Place the pie in the preheated oven and bake for 30 to 35 minutes. Bake until the top of the pie is golden brown and a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the pie to cool completely before serving to let the crust firm up on the bottom while the filling remains creamy on top. For serving, add whipped cream or ice cream if desired.
Notes
- Use whole or 2% milk for the best texture in the filling.
- Make sure to whisk the filling constantly while heating to prevent lumps.
- The pie should be cooled thoroughly to allow proper set of crust and filling.
- Serving with whipped cream or ice cream enhances the dessert.
- Use a 9-inch pie dish for optimal thickness and baking.
