Fettuccine Pasta:

  • 12 oz fettuccine pasta

Chicken:

  • 1 pound boneless skinless chicken breast (sliced into strips)
  • 1 tablespoon Cajun seasoning (plus more to taste)

Vegetables:

  • 2 cloves garlic (minced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)

Sauce:

  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Garnish:

  • Chopped parsley for garnish

Instructions

  1. Cook the Pasta: Cook fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. Sear the Chicken: In a large skillet over medium heat, heat olive oil. Season chicken strips with Cajun seasoning and cook until fully cooked and browned. Remove and set aside.
  3. Sauté Vegetables: In the same skillet, add garlic and bell peppers. Sauté until softened.
  4. Make the Sauce: Add heavy cream and chicken broth to the skillet. Bring to a simmer. Stir in Parmesan cheese until melted and smooth.
  5. Combine and Serve: Return cooked chicken to the skillet, add drained pasta, and toss until coated. Season with Cajun seasoning, salt, and pepper. Garnish with parsley and serve warm.

Notes

  • For extra heat, add cayenne pepper or red pepper flakes.
  • You can use shrimp or sausage instead of chicken.
