Ingredients
Scale
Chicken and Coating
- 2 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup breadcrumbs (panko preferred)
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
Buns and Toppings
- 4 sandwich buns or brioche rolls
- 2 tablespoons olive oil or melted butter (for toasting)
- 1 cup chopped romaine lettuce
- 1/2 cup Caesar dressing
- Extra grated Parmesan for topping (optional)
Instructions
- Prepare the Chicken: Pound the chicken breasts to an even thickness and slice each in half to create four portions. Place the chicken pieces in a bowl with the buttermilk and marinate for at least 30 minutes, or overnight for best flavor.
- Make the Coating Mixture: In a shallow dish, combine the all-purpose flour, panko breadcrumbs, garlic powder, salt, black pepper, and grated Parmesan cheese, mixing thoroughly.
- Coat the Chicken: Remove the chicken from the buttermilk, allowing excess liquid to drip off. Dredge each piece in the flour and breadcrumb mixture, pressing firmly to ensure an even, thorough coating.
- Cook the Chicken: Heat the olive oil or melted butter in a large skillet over medium heat. Add the coated chicken pieces and cook for 4 to 5 minutes per side, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
- Drain and Rest: Remove the cooked chicken from the skillet and place on a paper towel-lined plate to drain excess oil.
- Toast the Buns: Lightly brush the sandwich buns or brioche rolls with olive oil or melted butter and toast them in the skillet or oven until golden brown.
- Assemble the Sandwich: Spread Caesar dressing on the bottom half of each toasted bun. Layer with crispy chicken, chopped romaine lettuce, and extra Parmesan cheese if desired. Top with the bun tops and serve immediately.
Notes
- For extra crunch, double-dip the chicken by repeating the dredging process before cooking.
- Use store-bought or homemade Caesar dressing to suit your taste preference.
- Add crispy bacon or sliced tomatoes as a delicious variation.
