  • 1 tablespoon olive oil
  • 1 large onion (chopped)
  • 2 garlic cloves (minced)
  • 6 pork sausages (browned and sliced)
  • 2 carrots (peeled and sliced)
  • 2 celery stalks (sliced)
  • 1 red bell pepper (chopped)
  • 1 can (14 oz) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup low-sodium chicken broth
  • 1 can (15 oz) cannellini beans (drained and rinsed)
  • Salt and black pepper to taste
  • Chopped fresh parsley (for garnish)


Instructions

  1. Step 1: Heat the olive oil in a skillet. Saute the onion until softened, then add garlic.
  2. Step 2: Brown the sausages in the skillet, then slice and transfer to the crockpot.
  3. Step 3: Add carrots, celery, bell pepper, tomatoes, tomato paste, spices, and broth to the crockpot. Cook on low for 6–7 hours or high for 3–4 hours.
  4. Step 4: Stir in beans, season with salt and pepper. Garnish with parsley before serving.
