- 1 tablespoon olive oil
- 1 large onion (chopped)
- 2 garlic cloves (minced)
- 6 pork sausages (browned and sliced)
- 2 carrots (peeled and sliced)
- 2 celery stalks (sliced)
- 1 red bell pepper (chopped)
- 1 can (14 oz) diced tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 cup low-sodium chicken broth
- 1 can (15 oz) cannellini beans (drained and rinsed)
- Salt and black pepper to taste
- Chopped fresh parsley (for garnish)
Instructions
- Step 1: Heat the olive oil in a skillet. Saute the onion until softened, then add garlic.
- Step 2: Brown the sausages in the skillet, then slice and transfer to the crockpot.
- Step 3: Add carrots, celery, bell pepper, tomatoes, tomato paste, spices, and broth to the crockpot. Cook on low for 6–7 hours or high for 3–4 hours.
- Step 4: Stir in beans, season with salt and pepper. Garnish with parsley before serving.
