- Mix Dry Ingredients: Combine the all-purpose flour, powdered sugar, and softened plant-based margarine in an electric mixer. Beat on medium speed until the mixture becomes smooth and evenly blended.
- Incorporate Wet Ingredients: In a separate small bowl, mix the warm water and liquid egg substitute thoroughly. Add this mixture along with molasses to the mixer with the dry ingredients. Continue mixing on medium speed until the dough is smooth. Finally, fold in the dairy-free mini chocolate chips.
- Chill and Prepare Dough: Pour the cookie dough into an 8×8 inch pan and refrigerate for 30 minutes to firm up. Meanwhile, preheat your oven to 325°F (163°C). Once chilled, slice the dough into 32 strips approximately 1/4 inch wide and 4 inches long.
- Bake the Cookie Fries: Arrange 16 strips spaced evenly on a baking sheet. Bake in the preheated oven for 20 to 22 minutes, or until the cookie fries are crunchy and lightly golden. Remove from the oven and allow to cool slightly before serving.
