- 8 slices artisan bread (such as sourdough)
- 1/2 cup mayonnaise
- 1/2 cup cream cheese (softened)

- 1/2 teaspoon salt

Cheeses
- 4 slices provolone cheese
- 4 slices cheddar cheese
- 4 slices American cheese
- 1/2 cup shredded double Gloucester or more cheddar (optional)
Instructions
- Prepare the Garlic Mayo Spread: In a small bowl, combine the mayonnaise, softened cream cheese, garlic powder, and salt. Mix until smooth and creamy. This spread will add flavor and help create a golden crust when grilling.
- Assemble the Sandwiches: Spread a thin, even layer of the garlic mayo mixture on one side of each bread slice—this side will be the outside when grilling. On the unspread side of half the slices, layer one slice each of provolone, cheddar, and American cheese, then sprinkle some shredded double Gloucester or extra cheddar if using.
- Form the Sandwiches: Top each layered bread slice with the remaining bread slices, garlic mayo side facing out, to complete each sandwich.
- Preheat the Skillet: Heat a large skillet or griddle over medium heat. Add a little softened butter to coat the pan, which will enhance browning and prevent sticking.
- Grill the Sandwiches: Place the sandwiches in the skillet, mayo side down. Cook for 2–3 minutes until the bread is golden and crispy. Press gently with a spatula to ensure even grilling. Flip and cook the other side for another 2–3 minutes until the cheese is fully melted and the crust is crispy and golden brown.
- Serve: Remove the sandwiches from the skillet, let them rest for a minute to avoid burning, then slice diagonally and serve warm for the best melty, cheesy experience.

- For an even crispier crust, grill the sandwiches on lower heat for a longer time and press down gently with a spatula or use a panini press.
