Description

This Easy Boursin Chicken recipe features succulent seared chicken breasts simmered in a creamy sauce made with Boursin Garlic & Fine Herbs cheese, garlic, mushrooms, and a touch of heavy cream. Ready in just 30 minutes, this dish is perfect for a flavorful and elegant weeknight dinner.

Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Sauce

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 cup sliced baby bella mushrooms
  • ½ cup chicken broth
  • 1 (5.2-ounce) package Boursin Garlic & Fine Herbs cheese
  • ¼ cup heavy cream
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Prep Chicken: Pat the chicken breasts dry with paper towels and season both sides evenly with salt and black pepper to enhance the flavor.
  2. Sear Chicken: Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts and sear them for 5 to 6 minutes on each side until golden brown and cooked through. Once cooked, transfer the chicken to a plate and keep warm.
  3. Cook Mushrooms and Garlic: In the same skillet, add the sliced baby bella mushrooms. Cook them for 5 to 6 minutes until they become golden and tender. Add the minced garlic and sauté for 30 seconds until fragrant.
  4. Make Sauce: Pour in the chicken broth, scraping the bottom of the skillet to loosen any browned bits that add flavor. Stir in the Boursin Garlic & Fine Herbs cheese and heavy cream, whisking continuously until the sauce is smooth, creamy, and well combined.
  5. Simmer Chicken in Sauce: Return the seared chicken breasts to the skillet. Spoon the creamy sauce over the chicken and let it simmer for 2 to 3 minutes to heat through and meld the flavors.
  6. Garnish and Serve: Sprinkle the chopped fresh parsley over the chicken for a burst of color and freshness. Serve hot with your favorite side dish for a delightful meal.

Notes

  • Make sure the chicken is cooked through to an internal temperature of 165°F (74°C) for safety.
  • You can substitute baby bella mushrooms with cremini or white button mushrooms if preferred.
  • If you prefer a thicker sauce, simmer a bit longer or add a slurry of cornstarch and water.
  • Serve with steamed vegetables, mashed potatoes, or rice for a complete meal.
  • For a lighter version, substitute heavy cream with half-and-half or milk, but the sauce will be less rich.
