Description

For the Crockpot Dinner:

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup frozen peas and carrots
  • 2 cups diced potatoes (peeled)
  • 1/2 cup chopped onion
  • 1 tablespoon olive oil

Optional for Garnish:

  • Chopped parsley

Instructions

  1. Prepare the Ingredients: Add olive oil to the bottom of the crockpot. Season chicken breasts with salt, pepper, garlic powder, and onion powder. Add onions, potatoes, and frozen peas and carrots on top.
  2. Mix the Sauce: In a small bowl, whisk together cream of chicken soup and chicken broth. Pour over the ingredients in the crockpot.
  3. Cook: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until chicken is cooked through and vegetables are tender.
  4. Shred and Serve: Shred the chicken, stir to combine, adjust seasoning if needed. Serve warm, garnished with parsley if desired.

Notes

  • You can swap out peas and carrots for any mixed frozen vegetables.
  • Boneless chicken thighs can be used for a richer flavor.
  • For a creamier version, stir in 1/2 cup sour cream at the end.
