For the Crockpot Dinner:
- 1.5 pounds boneless, skinless chicken breasts
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup frozen peas and carrots
- 2 cups diced potatoes (peeled)
- 1/2 cup chopped onion
- 1 tablespoon olive oil

- Chopped parsley
Instructions
- Prepare the Ingredients: Add olive oil to the bottom of the crockpot. Season chicken breasts with salt, pepper, garlic powder, and onion powder. Add onions, potatoes, and frozen peas and carrots on top.
- Mix the Sauce: In a small bowl, whisk together cream of chicken soup and chicken broth. Pour over the ingredients in the crockpot.
- Cook: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until chicken is cooked through and vegetables are tender.
- Shred and Serve: Shred the chicken, stir to combine, adjust seasoning if needed. Serve warm, garnished with parsley if desired.
Notes
- You can swap out peas and carrots for any mixed frozen vegetables.
- Boneless chicken thighs can be used for a richer flavor.
- For a creamier version, stir in 1/2 cup sour cream at the end.
