For the Salisbury Steak Patties

- Prepare the Patties: In a mixing bowl, combine the ground beef, panko breadcrumbs, beaten egg, ketchup, Dijon mustard, dried oregano, and kosher salt. Mix thoroughly until well combined, then shape the mixture into four oval-shaped patties.
- Brown the Patties: Heat the olive oil in a nonstick skillet over medium-high heat. Cook the patties for about 3 minutes on each side until they develop a golden brown crust. Remove the patties from the skillet and set them aside.
- Make the Gravy: In the same skillet, melt the unsalted butter over medium heat. Whisk in the flour until it forms a smooth paste (roux). Gradually add the beef stock while whisking continuously to prevent lumps from forming.
- Add Flavor and Mushrooms: Stir in ketchup, Worcestershire sauce, onion powder, and the sliced cremini mushrooms into the gravy. Allow this mixture to simmer gently for 5 minutes to meld the flavors and soften the mushrooms.
- Finish Cooking Patties: Return the browned patties to the skillet, covering them with the mushroom gravy. Cover the skillet with a lid and cook for an additional 10 minutes, or until the patties are fully cooked through with an internal temperature of 160°F (71°C).
- Serve: Plate the Salisbury steak patties over warm mashed potatoes and spoon the mushroom gravy over the top. Serve alongside roasted broccoli for a complete meal.
