Description

These Easy Nachos are a delicious and crowd-pleasing appetizer featuring crispy tortilla chips loaded with melted cheddar and Monterey Jack cheeses, black beans, olives, tomatoes, and optional jalapeños. Baked to bubbly perfection and garnished with fresh green onions and cilantro, they are perfect for parties or a quick snack. Serve with sour cream, guacamole, and salsa for a flavorful, vegetarian Mexican-American treat.

Ingredients

Scale

Chips & Cheese

  • 8 ounces tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Toppings

  • 1 cup canned black beans, rinsed and drained
  • 1/2 cup sliced black olives
  • 1/2 cup chopped tomatoes
  • 1/4 cup sliced jalapeños (optional)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped fresh cilantro

To Serve

  • 1/2 cup sour cream
  • 1/2 cup guacamole
  • 1/2 cup salsa

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) to ensure it’s hot enough to melt the cheese evenly and toast the chips slightly.
  2. Arrange the Chips: Spread the tortilla chips evenly on a large baking sheet or a suitable oven-safe platter so they form a single layer for even topping and baking.
  3. Add Cheese: Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the chips, covering as much surface as possible to get gooey, melted cheese throughout.
  4. Layer Toppings: Distribute the black beans, sliced black olives, chopped tomatoes, and jalapeños (if using) uniformly across the cheese-covered chips for balanced flavor and texture.
  5. Bake: Place the baking sheet in the oven and bake for 8–10 minutes, or until the cheese has fully melted and is bubbly and slightly golden.
  6. Finish with Fresh Herbs: Remove the nachos from the oven and immediately sprinkle the chopped green onions and fresh cilantro over the top to add a fresh and vibrant flavor contrast.
  7. Serve: Serve the nachos hot with sour cream, guacamole, and salsa either on the side or drizzled over the top, depending on your preference.

Notes

  • You can substitute the cheeses with a Mexican cheese blend or use just one type if preferred.
  • To make this a more filling meal, add cooked ground beef or shredded chicken before baking.
  • Keep it vegetarian by sticking with beans, vegetables, and cheese only.
  • Feel free to customize toppings based on your preference, such as adding corn, jalapeño slices, or pico de gallo.
