Milk
- 0.54 cups coconut milk (full fat) or substitute with evaporated milk, heavy cream, or evaporated coconut milk
- 4 tbsp evaporated milk or coconut milk for a vegan version (for serving)
Instructions
- Blend Mangoes: Transfer the mango chunks into a blender or food processor and blend until a smooth puree forms. For an extra smooth texture, strain the puree through a fine mesh sieve.
- Prepare Gelatin Mixture: In a small bowl, mix the cold water with gelatin (or agar agar powder for a vegan version) to allow it to bloom. Then, in a mixing bowl, combine the bloomed gelatin, sugar, coconut milk, and mango puree. Whisk thoroughly until the mixture is smooth and well combined.
- Heat Mixture: Pour the combined mixture into a pot and gently heat over medium-low heat. Stir continuously until the gelatin completely dissolves, making sure not to let the mixture boil as it can affect the texture.
- Set the Pudding: Once the gelatin is dissolved, pour the mixture into serving bowls or molds. Transfer to the refrigerator and chill for at least 6 hours, or preferably overnight, until the pudding has fully set and firmed up.
