Description

This Easy Simple Mango Pudding Recipe is a delightful and refreshing dessert made with ripe mangoes, creamy coconut milk, and a hint of sweetness. Perfect for a light treat, it uses gelatin or agar agar for a vegan alternative to achieve a smooth, silky texture. Ready in under 15 minutes of active prep and a few hours to chill, it’s a perfect no-bake dessert for any occasion.

Ingredients

Scale

Mango Puree

  • 12 oz fully ripened and tender mangoes, peeled, pitted, and diced

Gelatin Mixture

  • 2 tbsp cold water
  • 1.5 tbsp gelatin or 1.5 tsp agar agar powder for a vegan version
  • 1.5 tbsp white granulated sugar

Milk

  • 0.54 cups coconut milk (full fat) or substitute with evaporated milk, heavy cream, or evaporated coconut milk
  • 4 tbsp evaporated milk or coconut milk for a vegan version (for serving)

Instructions

  1. Blend Mangoes: Transfer the mango chunks into a blender or food processor and blend until a smooth puree forms. For an extra smooth texture, strain the puree through a fine mesh sieve.
  2. Prepare Gelatin Mixture: In a small bowl, mix the cold water with gelatin (or agar agar powder for a vegan version) to allow it to bloom. Then, in a mixing bowl, combine the bloomed gelatin, sugar, coconut milk, and mango puree. Whisk thoroughly until the mixture is smooth and well combined.
  3. Heat Mixture: Pour the combined mixture into a pot and gently heat over medium-low heat. Stir continuously until the gelatin completely dissolves, making sure not to let the mixture boil as it can affect the texture.
  4. Set the Pudding: Once the gelatin is dissolved, pour the mixture into serving bowls or molds. Transfer to the refrigerator and chill for at least 6 hours, or preferably overnight, until the pudding has fully set and firmed up.
  5. Serve and Enjoy: Serve the chilled mango pudding with a drizzle of evaporated milk or coconut milk as a creamy accompaniment.

Notes

  • For a vegan alternative, use agar agar powder instead of gelatin and substitute dairy milk with coconut milk or other plant-based milk.
  • Ensure not to boil the gelatin mixture to maintain a smooth and desirable pudding texture.
  • The pudding requires sufficient chilling time to set properly, so plan ahead.
  • Ripe, sweet mangoes will provide the best flavor and natural sweetness to the pudding.
  • Straining the mango puree is optional but recommended for an ultra-smooth dessert.
