Base Ingredients
- 1 cup cottage cheese (full-fat or low-fat)
- 3 large eggs
- ¼ cup rolled oats
- ½ teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 tablespoon honey or maple syrup
- Pinch of salt
For Cooking
- Butter or oil for cooking
Instructions
- Prepare the batter: Add the cottage cheese, eggs, rolled oats, baking powder, vanilla extract, honey or maple syrup, and a pinch of salt to a blender. Blend on high speed for about 30 seconds until the batter is smooth and well combined.
- Preheat skillet: Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or oil to prevent sticking.
- Cook pancakes: Pour about ¼ cup of batter per pancake onto the skillet. Cook for 2 to 3 minutes, until bubbles form on the surface and edges look set. Flip the pancakes and cook for another 1 to 2 minutes until golden brown and cooked through.
- Repeat: Continue cooking with the remaining batter, greasing the skillet as needed to prevent sticking.
- Serve warm: Plate the pancakes and serve warm with your favorite toppings, such as fresh fruit, yogurt, or extra maple syrup.
Notes
- You can substitute rolled oats with quick oats for a smoother texture.
- For a gluten-free version, ensure the oats used are certified gluten-free.
- Add a pinch of cinnamon or nutmeg to the batter for extra flavor.
- These pancakes can be made ahead and reheated in a toaster or microwave.
