Description

This Fried Egg Quesadilla recipe is a quick and delicious breakfast or snack option that combines fluffy fried eggs, melted cheese, and warm tortillas with a touch of salsa for added flavor. Easy to prepare in just 15 minutes, this dish offers a satisfying blend of textures and tastes perfect for any time of the day.

Ingredients

Scale

Eggs

  • 2 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Tortillas & Cheese

  • 2 flour tortillas
  • 1/2 cup shredded cheese (such as cheddar or Monterey Jack)

Other

  • 1 tablespoon butter
  • 1/4 cup salsa

Instructions

  1. Heat the skillet: Heat a nonstick skillet over medium heat to prepare for cooking the eggs.
  2. Melt the butter: Add the butter to the skillet and swirl the pan to coat the bottom evenly as it melts.
  3. Cook the eggs: Crack the eggs into the skillet carefully, keeping the yolks intact.
  4. Season the eggs: Sprinkle the salt and black pepper evenly over the eggs.
  5. Fry the eggs: Cook for 2-3 minutes until the egg whites are set and the yolks remain runny.
  6. Set aside eggs: Use a spatula to gently transfer the fried eggs to a plate and set them aside.
  7. Heat the first tortilla: Place one tortilla in the skillet and warm it for 1-2 minutes until slightly golden.
  8. Add cheese: Evenly sprinkle 1/4 cup of shredded cheese over the warmed tortilla.
  9. Add second tortilla: Place the second tortilla on top of the cheese-covered one.
  10. Press to melt cheese: Gently press down with a spatula to help the cheese begin melting.
  11. Cook first side of quesadilla: Cook for 1-2 minutes until the bottom tortilla is lightly browned and crispy.
  12. Flip and cook other side: Carefully flip the quesadilla and cook for another 1-2 minutes until golden brown and cheese is fully melted.
  13. Remove and slice: Take the quesadilla off the skillet, place on a cutting board, and cut into wedges with a sharp knife.
  14. Top with eggs: Place the fried eggs on top of one of the quesadilla wedges.
  15. Add salsa and serve: Spoon salsa over the eggs and serve immediately for best flavor and texture.

Notes

  • For a spicier kick, use a hot salsa or add some chopped jalapeños inside the quesadilla.
  • Cheese options like cheddar, Monterey Jack, or a Mexican blend work well for melty quesadillas.
  • You can cook the eggs to your preferred doneness; just adjust the frying time accordingly.
  • Use medium heat to avoid burning the tortillas while allowing the cheese to melt properly.
  • Serve with extra salsa or guacamole on the side for added flavor.
