Description

Tender chicken cubes marinated in a savory blend of olive oil, garlic, Italian seasoning, and spices are skewered and grilled to perfection, then topped with melted Parmesan cheese and fresh parsley for a deliciously cheesy finish.

  • 1 ½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced

  • ½ teaspoon crushed red pepper flakes (optional)

Instructions

  1. Prepare the marinade: In a large bowl, combine olive oil, minced garlic, salt, black pepper, Italian seasoning, and crushed red pepper flakes. Mix well to create the marinade base.
  2. Marinate the chicken: Add the chicken cubes to the marinade and toss well to coat evenly. Cover the bowl and refrigerate for at least 30 minutes or up to 4 hours to allow the flavors to infuse the chicken.
  3. Prepare skewers: If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning on the grill. Thread the marinated chicken pieces evenly onto the skewers.
  4. Preheat grill: Heat your grill or grill pan over medium heat to prepare for cooking the skewers.
  5. Grill chicken skewers: Place the skewers on the grill and cook for 10 to 12 minutes, turning occasionally to ensure even cooking and nice grill marks. The chicken should be cooked through and no longer pink inside.
  6. Add Parmesan cheese: During the last 2 minutes of cooking, evenly sprinkle the grated Parmesan cheese over the skewers, allowing it to melt slightly and coat the chicken.
