Description

A refreshing and vibrant Greek Pasta Salad featuring al dente rotini pasta tossed with juicy cherry tomatoes, crisp cucumber, kalamata olives, and tangy feta cheese, all coated in a zesty olive oil and red wine vinegar dressing infused with fresh herbs and garlic. Perfect as a side dish for summer gatherings or light meals.

Ingredients

Scale

Salad Ingredients

  • 12 oz rotini or penne pasta
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup kalamata olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley

Dressing Ingredients

  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 garlic clove, minced
  • Salt and black pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the rotini or penne pasta according to package instructions until al dente. Drain the pasta and rinse it under cold water to stop the cooking process and cool it down completely.
  2. Combine the Salad Ingredients: In a large mixing bowl, add the cooled pasta, halved cherry tomatoes, diced cucumber, thinly sliced red onion, halved kalamata olives, crumbled feta cheese, and chopped fresh parsley. Gently toss to mix evenly.
  3. Prepare the Dressing: In a small bowl or jar, whisk together the extra virgin olive oil, red wine vinegar, lemon juice, dried oregano, minced garlic, salt, and black pepper until well combined.
  4. Toss the Salad: Pour the dressing over the pasta and vegetables. Toss everything together thoroughly to ensure that the salad is evenly coated with the dressing.
  5. Chill and Serve: Refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature for the best taste and texture.

Notes

  • This salad can be prepared a day ahead and stored in the fridge to enhance the flavors.
  • Add grilled chicken or another protein of choice to turn it into a complete meal.
  • For a gluten-free option, substitute the pasta with gluten-free pasta varieties.
