Ingredients
Scale
Chicken Bites
- 2 chicken breasts, boneless and skinless
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
Creamy Garlic Sauce
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons heavy cream
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon chopped fresh parsley
Instructions
- Preheat the grill. Preheat your grill to medium-high heat to ensure it’s hot enough for grilling the chicken bites evenly.
- Cut the chicken. Cut the boneless, skinless chicken breasts into bite-sized pieces, roughly 1 to 2 inches in size, for quick and even cooking.
- Season the chicken. Place the chicken pieces in a large mixing bowl. Drizzle olive oil over them, then add paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Toss thoroughly so each piece is fully coated in the seasoning mixture.
- Marinate briefly. Set the seasoned chicken aside for a few minutes to let the flavors infuse the meat before cooking.
- Prepare the creamy garlic sauce. In a small bowl, mix mayonnaise, sour cream, and heavy cream. Add minced garlic and lemon juice, stirring well until smooth and creamy. Finally, fold in the finely chopped fresh parsley.
- Grill the chicken bites. Place the chicken pieces on the preheated grill in a single layer. Grill each side for 5 to 7 minutes, turning occasionally until fully cooked and the internal temperature reaches 165°F.
- Serve and garnish. Remove the grilled chicken bites from the grill and transfer them to a serving plate. Serve with the creamy garlic sauce either on the side for dipping or drizzled over the chicken. Garnish with extra chopped parsley for an enhanced presentation and fresh flavor.
Notes
- Ensure the grill is at medium-high heat to avoid undercooking or burning the chicken bites.
- Use a meat thermometer to check for doneness; chicken should reach an internal temperature of 165°F for safety.
- The creamy garlic sauce can be made ahead of time and refrigerated until ready to serve.
- For extra spice, increase the cayenne pepper slightly, but adjust according to your heat preference.
- Leftover grilled chicken bites can be refrigerated for up to 3 days and reheated gently.
