Instructions

  1. Prep the chicken: Pat the chicken pieces dry with paper towels and place them in a large mixing bowl.
  2. Season: Add olive oil, ranch seasoning, minced garlic, salt, pepper, and paprika (if using). Toss until the chicken is evenly coated.
  3. Marinate (optional): Cover and refrigerate for at least 30 minutes, or up to 4 hours, to let the flavors develop.
  4. Assemble skewers: Thread the seasoned chicken pieces onto metal or soaked wooden skewers.
  5. Grill: Preheat your grill or grill pan to medium-high heat. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is golden and cooked through (internal temperature should reach 165°F / 74°C).
  6. Finish: During the last minute of grilling, sprinkle the skewers with the grated Parmesan so it melts slightly over the chicken.
