Chicken and Marinade
- 1 ½ pounds boneless, skinless chicken breasts, cut into 1 ½-inch cubes
- 2 tablespoons olive oil
- 2 tablespoons ranch seasoning mix (ensure gluten-free if needed)
- 3 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika (optional, for color)

- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (for garnish)

Instructions
- Prep the chicken: Pat the chicken pieces dry with paper towels and place them in a large mixing bowl.
- Season: Add olive oil, ranch seasoning, minced garlic, salt, pepper, and paprika (if using). Toss until the chicken is evenly coated.
- Marinate (optional): Cover and refrigerate for at least 30 minutes, or up to 4 hours, to let the flavors develop.
- Assemble skewers: Thread the seasoned chicken pieces onto metal or soaked wooden skewers.
- Grill: Preheat your grill or grill pan to medium-high heat. Grill the skewers for 10–12 minutes, turning occasionally, until the chicken is golden and cooked through (internal temperature should reach 165°F / 74°C).
- Finish: During the last minute of grilling, sprinkle the skewers with the grated Parmesan so it melts slightly over the chicken.
- Serve: Remove from grill, sprinkle with fresh parsley and extra Parmesan. Serve hot with ranch dressing or a squeeze of lemon.
Notes
- For best flavor, marinate the chicken for at least 30 minutes, but you can marinate it for up to 4 hours.
- If using wooden skewers, soak them in water for 30 minutes before assembling to prevent burning on the grill.
- Use a meat thermometer to ensure the chicken reaches a safe internal temperature of 165°F (74°C).
- Optional paprika adds color but can be omitted if desired.
- Serve with ranch dressing or lemon wedges to enhance the taste.
