- 1 ½ cups rolled oats
- 1 cup finely grated carrots
- ½ cup unsweetened shredded coconut
- ¼ cup chopped walnuts
- ¼ cup raisins
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg

- ¼ teaspoon sea salt
Wet Ingredients:
- ½ cup almond butter
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
Instructions
- Prepare the Pan: Line an 8×8-inch pan with parchment paper.
- Mix Dry Ingredients: In a large bowl, combine oats, grated carrots, shredded coconut, walnuts, raisins, cinnamon, nutmeg, ginger, and salt.
- Combine Wet Ingredients: In a saucepan over low heat, warm almond butter and maple syrup until smooth. Stir in vanilla extract.
- Combine Mixtures: Pour the wet mixture over the dry ingredients and mix until coated.
- Set Bars: Press mixture into the pan firmly. Refrigerate for at least 2 hours.
- Cut and Serve: Once set, cut into bars and store in the fridge.
Notes
- You can substitute almond butter with peanut or sunflower seed butter.
