Ingredients
Scale
Batter Ingredients
- 2 large eggs
- 1 cup (240ml) eggnog
- ½ cup (120ml) vegetable oil
- 1 cup (200g) granulated sugar
- 1 teaspoon vanilla extract
- 2¼ cups (280g) all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cinnamon
Glaze Ingredients
- 1 cup (120g) powdered sugar
- 2–3 tablespoons eggnog
- Pinch of nutmeg (optional, for garnish)
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper to ensure easy removal of the bread once baked.
- Mix wet ingredients: In a large bowl, whisk together the eggs, eggnog, vegetable oil, granulated sugar, and vanilla extract until the mixture is smooth and homogeneous.
- Combine dry ingredients: In a separate bowl, whisk the all-purpose flour, baking powder, salt, ground nutmeg, and ground cinnamon to evenly distribute the leavening and spices.
- Mix batter: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix to keep the bread tender.
- Bake the bread: Pour the batter into the prepared loaf pan, spreading it evenly. Bake in the preheated oven for 50 to 60 minutes or until a toothpick inserted in the center comes out clean, indicating the bread is fully cooked.
- Cool the bread: Allow the bread to cool in the pan for about 10 minutes, then carefully transfer it to a wire rack and let it cool completely to room temperature.
- Prepare and apply glaze: In a small bowl, whisk the powdered sugar with 2 to 3 tablespoons of eggnog to make a smooth glaze. Drizzle the glaze over the cooled bread, then sprinkle a pinch of nutmeg on top for a festive finishing touch.
Notes
- Do not overmix the batter once the dry ingredients are added; overmixing can lead to a dense bread.
- If you prefer a stronger eggnog flavor, use the maximum amount of eggnog in the glaze or add a splash extra into the batter.
- Ensure the bread is completely cool before glazing to prevent the glaze from melting off.
- Store leftover bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- For a boozy twist, add 1 tablespoon of rum or bourbon to the glaze.
