Chocolate Coating:
- 1 1/2 cups milk chocolate chips or chopped milk chocolate
- 1 teaspoon coconut oil or vegetable shortening (optional, for smoother chocolate)
Instructions
- Preheat and Prepare: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream Butter and Sugar: In a large bowl, cream the butter and powdered sugar until light and fluffy. Mix in vanilla extract.
- Add Dry Ingredients: Gradually add the flour and salt, mixing until a soft dough forms.
- Shape and Bake: Roll the dough into 1-inch balls, flatten slightly, and bake for 10–12 minutes until edges are golden.
- Add Caramel: Spoon about 1 teaspoon of caramel onto each cookie and chill to set.
- Prepare Chocolate Coating: Melt chocolate chips and coconut oil in intervals, then drizzle over the caramel layer.
- Chill and Serve: Chill until chocolate sets before serving.
Notes
- You can use store-bought soft caramels melted with a splash of milk for the caramel layer.
