Chocolate Coating:

  • 1 1/2 cups milk chocolate chips or chopped milk chocolate

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugar: In a large bowl, cream the butter and powdered sugar until light and fluffy. Mix in vanilla extract.
  3. Add Dry Ingredients: Gradually add the flour and salt, mixing until a soft dough forms.
  4. Shape and Bake: Roll the dough into 1-inch balls, flatten slightly, and bake for 10–12 minutes until edges are golden.
  5. Add Caramel: Spoon about 1 teaspoon of caramel onto each cookie and chill to set.
  6. Prepare Chocolate Coating: Melt chocolate chips and coconut oil in intervals, then drizzle over the caramel layer.
  7. Chill and Serve: Chill until chocolate sets before serving.

Notes

  • You can use store-bought soft caramels melted with a splash of milk for the caramel layer.
