Ingredients
Scale
Chicken and Marinade
- 1 pound boneless, skinless chicken breasts (cut into bite-sized pieces)
- 2 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons adobo sauce (from canned chipotle peppers)
- 1 chipotle pepper in adobo (minced)
- 2 cloves garlic (minced)
- 1 tablespoon lime juice
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- ½ teaspoon salt
- ½ teaspoon black pepper
Bowls Toppings and Base
- 2 cups cooked white or brown rice
- 1 cup canned black beans (rinsed and drained)
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 avocado (sliced)
- ½ cup cherry tomatoes (halved)
- ¼ cup red onion (thinly sliced)
- Fresh cilantro and lime wedges for garnish
Instructions
- Prepare the Marinade: In a bowl, whisk together olive oil, honey, adobo sauce, minced chipotle pepper, garlic, lime juice, smoked paprika, cumin, salt, and black pepper until smooth and well combined.
- Marinate the Chicken: Add the bite-sized chicken pieces to the marinade and toss thoroughly to coat. Let the chicken marinate for at least 20 minutes, preferably up to 2 hours to enhance flavor.
- Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken pieces and cook for 6 to 8 minutes, turning occasionally, until the chicken is browned on the outside and cooked through inside.
- Assemble the Bowls: Divide the cooked rice evenly among serving bowls. Arrange the cooked chicken, black beans, corn, sliced avocado, cherry tomatoes, and red onion on top of the rice.
- Garnish and Serve: Sprinkle fresh cilantro over each bowl and serve with lime wedges to squeeze over for a bright finish. Enjoy immediately.
Notes
- Adjust the spice level by adding more or fewer chipotle peppers according to your heat preference.
- For a smoky flavor alternative, grill the chicken instead of pan-cooking it on the stovetop.
- Substitute the rice with quinoa or cauliflower rice for a lower-carb or lighter option.
