  • ½ cup honey
  • ¼ cup Dijon mustard
  • 2 tablespoons whole grain mustard (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste

Vegetables

  • 1 pound baby red potatoes, quartered
  • 2 cups baby carrots
  • 2 cups green beans, trimmed

Instructions

  1. Preheat: Preheat your oven to 400°F (200°C) or prepare your grill to medium-high heat for cooking the foil packets.
  2. Mix the Sauce: In a small bowl, whisk together honey, Dijon mustard, whole grain mustard (if using), olive oil, garlic powder, paprika, salt, and pepper until well combined.
  3. Prepare Foil Packets: Tear 4 large pieces of heavy-duty aluminum foil. Place one chicken breast in the center of each piece.
  4. Add Vegetables: Evenly divide the quartered baby potatoes, baby carrots, and trimmed green beans among the foil packets, placing them around and slightly beneath the chicken breasts.
  5. Add Sauce: Spoon 2 to 3 tablespoons of the honey mustard sauce over each chicken breast and drizzle a little over the vegetables. Reserve some sauce for serving if desired.
  6. Seal Packets: Fold the foil over the chicken and vegetables, sealing tightly to create a secure packet that will steam and cook the ingredients evenly.
  7. Cook: Place the foil packets on a baking sheet and bake in the oven for 25–30 minutes or grill for the same time, until the chicken reaches an internal temperature of 165°F and the vegetables are tender.
  8. Serve: Carefully open the foil packets, garnish with fresh parsley if using, and serve with extra honey mustard sauce on the side.
