  • 1/4 teaspoon black pepper

Feta Honey Topping

  • 1/3 cup crumbled feta cheese
  • 2 tablespoons hot honey (plus more for drizzling)
  • 1 tablespoon fresh lemon juice
  • Chopped fresh parsley for garnish


Instructions

  1. Preheat Oven and Prepare Seasoning: Preheat your oven to 400°F (200°C). In a small bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and crushed red pepper flakes. Mix well to create a flavorful rub.
  2. Season the Chicken: Rub the seasoning mixture all over the chicken thighs ensuring an even coat. Lay the chicken in a baking dish or oven-safe skillet in a single layer.
  3. Roast the Chicken: Place the baking dish in the preheated oven and roast the chicken for 25–30 minutes, or until the chicken is cooked through, juices run clear, and the surface turns golden brown.
  4. Prepare Feta Honey Mixture: While the chicken bakes, combine the crumbled feta cheese, hot honey, and fresh lemon juice in a small bowl, stirring gently to form a sweet and savory topping.
  5. Top and Broil: Remove the chicken from the oven. Spoon the hot honey feta mixture evenly over each chicken thigh. Return to the oven and broil on high for 2–3 minutes, just until the feta topping is lightly golden and bubbling.
  6. Finish and Serve: Take the chicken out of the oven, drizzle with extra hot honey to taste, and garnish with freshly chopped parsley. Serve immediately while hot.
