Quesadilla Ingredients
- 4 flour tortillas
- 1 cup hummus
- 2 medium carrots, cut into thin matchsticks
- 1/2 medium zucchini, cut into thin matchsticks
- Feta cheese for sprinkling (approximately 4 heaping tablespoons total)
Instructions
- Preheat Skillet: Heat a nonstick skillet over medium heat to prepare for cooking the quesadillas.
- Spread Hummus: Evenly spread about 1/4 cup of hummus onto one tortilla, covering the surface as much as possible.
- Add Feta: Sprinkle a heaping tablespoon of crumbled feta cheese over the hummus layer to add tangy flavor.
- Add Vegetables: Place a small handful each of carrot and zucchini matchsticks on one half of the tortilla on top of the feta and hummus.
- Cook Tortilla: Carefully place the tortilla into the hot skillet and cover with a lid to trap heat.
- Brown Bottom: Cook for about 3 minutes or until the bottom of the tortilla starts to turn golden brown, checking gently with a spatula.
- Fold and Press: Fold the non-vegetable side of the tortilla over the veggies to form a half-moon shape, then use the spatula to gently press the quesadilla together.
- Rest and Slice: Slide the quesadilla onto a plate, let it rest for about 1 minute to set, then cut into wedges and serve.
- Repeat: Repeat the process with the remaining tortillas and ingredients until all quesadillas are prepared.
Notes
- For a gluten-free option, substitute flour tortillas with gluten-free tortillas.
- Feel free to add other vegetables like bell peppers or spinach for extra flavor and nutrition.
- Use a nonstick skillet to prevent sticking and ease flipping.
- To make it vegan, use a vegan feta alternative or omit the cheese.
- Adjust cooking time slightly depending on the heat of your skillet to avoid burning tortillas.
