Quesadilla Ingredients

  • 4 flour tortillas
  • 1 cup hummus
  • 2 medium carrots, cut into thin matchsticks
  • 1/2 medium zucchini, cut into thin matchsticks
  • Feta cheese for sprinkling (approximately 4 heaping tablespoons total)


Instructions

  1. Preheat Skillet: Heat a nonstick skillet over medium heat to prepare for cooking the quesadillas.
  2. Spread Hummus: Evenly spread about 1/4 cup of hummus onto one tortilla, covering the surface as much as possible.
  3. Add Feta: Sprinkle a heaping tablespoon of crumbled feta cheese over the hummus layer to add tangy flavor.
  4. Add Vegetables: Place a small handful each of carrot and zucchini matchsticks on one half of the tortilla on top of the feta and hummus.
  5. Cook Tortilla: Carefully place the tortilla into the hot skillet and cover with a lid to trap heat.
