Description

This Instant Pot Buffalo Chicken Dip is a creamy, spicy appetizer that’s perfect for game day or parties. Made with tender shredded rotisserie chicken, tangy Frank’s RedHot sauce, cream cheese, sour cream, and melted Colby Jack cheese, it’s a crowd-pleasing dip that cooks quickly and easily in your Instant Pot.

Ingredients

Scale

Buffalo Chicken Dip Ingredients

  • 2 cups shredded cooked rotisserie chicken
  • 1/2 cup Frank’s RedHot Original Sauce
  • 2 tsp garlic powder
  • 1/4 cup water
  • 8 ounces cream cheese, room temperature
  • 1/2 cup sour cream
  • 1 ½ cups shredded Colby Jack cheese, divided

Instructions

  1. Prepare the Mixture: In a medium bowl, combine the cream cheese, Frank’s RedHot Original Sauce, sour cream, and garlic powder. Mix thoroughly until well blended. Then, fold in the shredded rotisserie chicken along with half a cup of the shredded Colby Jack cheese.
  2. Assemble in Baking Dish: Spoon the combined mixture into an Instant Pot-safe baking dish, spreading it evenly. Sprinkle the remaining Colby Jack cheese on top and cover the dish tightly with foil.
  3. Set Up Instant Pot: Place the trivet inside the Instant Pot and add 1/4 cup of water to the bottom of the pot to create steam for pressure cooking. Carefully set the covered baking dish on top of the trivet.
  4. Pressure Cook the Dip: Seal the Instant Pot lid and set it to cook on manual high pressure for 7 minutes to thoroughly heat and meld the flavors.
  5. Release Pressure: Allow the pressure to release naturally for a smooth finish and to keep the dip creamy.
  6. Serve Warm: Remove the baking dish carefully, uncover, and serve the dip hot alongside your favorite dippers such as tortilla chips, crackers, or fresh vegetables.

Notes

  • Use room temperature cream cheese to ensure smooth mixing.
  • Substitute rotisserie chicken with cooked shredded chicken breasts if preferred.
  • Adjust the amount of hot sauce to control spiciness.
  • Serve immediately for the best texture; reheat gently if needed.
  • Can be stored in the refrigerator for up to 3 days and reheated in the Instant Pot or microwave.
