Chicken:
- 1 whole chicken (about 3–4 pounds), cut into pieces
Spice Mix:
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon paprika
- 1–2 green chilies, sliced
- 1 large tomato, finely chopped
Sauce:
- 1 can (13.5 oz) coconut milk
- 1/4 cup plain yogurt
- Salt to taste
Garnish:
- 1/4 cup chopped cilantro
- Juice of 1 lemon
- Optional: boiled eggs or potatoes for serving
Instructions
- Sauté Aromatics: Heat oil in a pot, sauté onions until golden. Add garlic, ginger, spices, and cook until fragrant.
- Add Chicken: Add green chilies, tomato, chicken pieces. Cook until chicken browns.
- Simmer: Pour in coconut milk, yogurt, salt. Simmer covered until chicken is tender.
- Thicken: Uncover, simmer to thicken sauce. Stir in lemon juice, cilantro.
- Serve: Serve hot with optional boiled eggs or potatoes, over rice or flatbread.
Notes
- For a smoky flavor, grill the chicken slightly before adding it to the sauce.
- Substitute bone-in chicken thighs or drumsticks for deeper flavor.
