Kuku Paka is a rich and creamy East African-Indian chicken curry cooked in coconut milk and yogurt, infused with aromatic spices. This ultimate recipe creates a flavorful and comforting dish that is perfect for any occasion.

Chicken:

  • 1 whole chicken (about 3–4 pounds), cut into pieces

Spice Mix:

  • 2 tablespoons vegetable oil

  • 4 garlic cloves, minced

  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1–2 green chilies, sliced
  • 1 large tomato, finely chopped

Sauce:

  • 1 can (13.5 oz) coconut milk
  • 1/4 cup plain yogurt
  • Salt to taste

Garnish:

  • 1/4 cup chopped cilantro
  • Juice of 1 lemon
  • Optional: boiled eggs or potatoes for serving

Instructions

  1. Sauté Aromatics: Heat oil in a pot, sauté onions until golden. Add garlic, ginger, spices, and cook until fragrant.
  2. Add Chicken: Add green chilies, tomato, chicken pieces. Cook until chicken browns.
  3. Simmer: Pour in coconut milk, yogurt, salt. Simmer covered until chicken is tender.
  4. Thicken: Uncover, simmer to thicken sauce. Stir in lemon juice, cilantro.
  5. Serve: Serve hot with optional boiled eggs or potatoes, over rice or flatbread.
