Scale
Ingredients
- 1/3 cup fresh lemon juice
- 1/2 cup extra virgin olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon honey or maple syrup
- 1 garlic clove, minced
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Combine Ingredients: In a small bowl or jar, whisk together the lemon juice, Dijon mustard, honey (or maple syrup), minced garlic, sea salt, and black pepper until fully blended.
- Emulsify: Slowly drizzle in the extra virgin olive oil while continuously whisking vigorously to create a smooth and emulsified dressing.
- Taste and Adjust: Taste the vinaigrette and adjust seasoning if needed, adding more salt, pepper, or sweetener as desired.
- Store: Transfer the vinaigrette to a sealed container and refrigerate for up to one week. Shake or whisk well before each use to recombine the ingredients.
Notes
- For a stronger garlic flavor, let the minced garlic sit in the lemon juice for a few minutes before mixing with other ingredients.
- Substitute maple syrup for honey to make the vinaigrette vegan-friendly.
- Shake well before each use as the dressing may separate when stored.
- Use fresh lemon juice for the best bright and authentic flavor.
