- 1 head of broccoli (cut into bite-size florets)
- 1/2 medium red onion (chopped finely)
- 1 small apple (honeycrisp, cut into small pieces)
- 1/2 cup dried cranberries
- 1/3 cup sliced almonds
Dressing Ingredients
- 1/2 cup Greek yogurt (2%)
- 1 heaping tablespoon mayonnaise
- 1 tablespoon honey
- 1/2 tablespoon cider vinegar
- Salt & pepper (to taste)
Instructions
- Prep the Produce: Thoroughly wash and cut the broccoli into bite-size florets. Finely chop half a medium red onion and dice the small honeycrisp apple into small pieces. Add all three ingredients to a large salad bowl along with the dried cranberries and sliced almonds.
- Make the Dressing: In a separate bowl, whisk together the Greek yogurt, mayonnaise, honey, cider vinegar, and salt and pepper until the dressing is smooth and creamy.
- Toss and Serve: Pour the dressing over the salad ingredients in the large bowl. Toss everything well to ensure the broccoli, apple, onion, cranberries, and almonds are evenly coated. Adjust seasoning with additional salt and pepper if desired. Serve the salad immediately or chill it in the refrigerator for a few hours to enhance flavors. Keep covered to prevent drying out.
