Description

This Maple Dijon Chicken & Sweet Potato Bowl recipe combines tender, flavorful chicken with sweet roasted potatoes, fresh spinach, and a tangy maple Dijon sauce. Perfectly balanced between sweet and savory, this wholesome meal is easy to prepare, packed with nutrients, and ideal for a hearty weeknight dinner.

Ingredients

Scale

Chicken and Vegetables

  • 2 lbs boneless, skinless chicken breasts, diced
  • 3 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups fresh spinach leaves
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Maple Dijon Sauce

  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sweet potatoes.
  2. Season the Sweet Potatoes: In a large mixing bowl, combine the cubed sweet potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss well to ensure even coating.
  3. Roast Sweet Potatoes: Spread the seasoned sweet potatoes in a single layer on a lined baking sheet. Roast in the preheated oven for 25-30 minutes until tender and golden, stirring once halfway through cooking.
  4. Cook the Chicken: While the potatoes roast, heat a large non-stick skillet over medium-high heat. Add the diced chicken breasts and season with salt and pepper. Cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and nicely browned. Remove from heat and set aside.
  5. Make the Maple Dijon Sauce: In a small bowl, whisk together Dijon mustard, pure maple syrup, apple cider vinegar, olive oil, salt, and pepper until smooth and well combined.
  6. Combine Chicken and Sauce: Return the cooked chicken to the skillet and pour the maple Dijon sauce over it. Stir to coat the chicken evenly, then cook for another 2-3 minutes until the sauce thickens slightly.
  7. Assemble the Bowls: Divide the roasted sweet potatoes and maple Dijon chicken evenly among serving bowls. Add fresh spinach leaves to each bowl.
  8. Garnish and Serve: Drizzle any remaining maple Dijon sauce over the bowls. Garnish with chopped fresh parsley, if using, for an added burst of flavor and color.

Notes

  • You can substitute chicken thighs for chicken breasts for a juicier result.
  • For a spicier kick, add a pinch of cayenne pepper to the sweet potato seasoning.
  • Make sure to toss the sweet potatoes halfway through roasting to promote even cooking and caramelization.
  • The dish can be meal-prepped by storing components separately and assembling before serving.
  • Fresh spinach can be substituted with kale or arugula if preferred.
