  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste

Mushrooms & Skewers

  • 1 pound button mushrooms, cleaned and stems trimmed
  • Wooden or metal skewers


Instructions

  1. Prepare the Marinade: In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, Worcestershire sauce, minced garlic, Dijon mustard, honey or maple syrup, dried thyme, dried rosemary, smoked paprika, salt, and black pepper until the mixture is smooth and well combined.
  2. Marinate the Mushrooms: Toss the cleaned and stem-trimmed mushrooms in the marinade until evenly coated. Cover and refrigerate for at least 30 minutes, ideally allowing 2 to 3 hours for the flavors to fully penetrate the mushrooms.
  3. Soak the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling. Metal skewers do not require soaking.
  4. Preheat the Grill: Preheat your grill to medium-high heat to ensure it’s hot enough to cook the mushrooms evenly and develop a nice char.
  5. Assemble the Skewers: Thread the marinated mushrooms onto the skewers, spacing them slightly apart to allow heat circulation and even cooking.
  6. Grill the Mushrooms: Place the skewers on the grill and cook for 10 to 12 minutes, turning occasionally to ensure all sides are nicely charred and the mushrooms are tender.
