Description

These Meatball Sub Bites are perfect bite-sized appetizers featuring tender meatballs nestled in a soft biscuit dough cup, topped with marinara sauce and melted mozzarella and Parmesan cheeses. Baked to golden perfection and seasoned with Italian herbs, they make a delicious and easy-to-make snack or party appetizer.

Dough and Meatballs

  • 1 can refrigerated biscuit dough (8 count)
  • 8 cooked meatballs (beef, turkey, or plant-based)

  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • Fresh parsley (optional, for garnish)


Instructions

  1. Preheat and prepare muffin tin: Preheat your oven to 375°F and lightly grease a muffin tin to prevent sticking.
  2. Shape dough cups: Cut each biscuit in half and flatten into small circles. Press each dough circle gently into the bottom and slightly up the sides of the muffin cups to form little dough cups.
  3. Assemble meatball bites: Place one cooked meatball into each dough cup. Spoon about a tablespoon of marinara sauce over each meatball, then sprinkle evenly with shredded mozzarella and grated Parmesan cheese.
  4. Add seasoning and oil: Lightly brush the edges of the dough with olive oil and sprinkle the Italian seasoning over the tops for flavor and golden color.
  5. Bake: Bake the assembled bites in the preheated oven for 15–18 minutes, or until the dough is golden brown and the cheese is melted and bubbly.
  6. Cool and serve: Let the bites cool slightly before carefully running a knife around each cup to remove them from the muffin tin. Garnish with chopped parsley if desired and serve warm.

Notes

  • Use homemade or frozen meatballs as long as they are fully cooked before assembling.
